Recipe: Sopaipillas (Mexican fried dough, 1960's)

SOPAIPILLAS



4 cups sifted flour
4 teaspoons baking powder
1 teaspoon salt
1 tablespoon shortening
1 egg, beaten
1 cup water
Fat for deep-fat frying

Sift flour, baking powder and salt together. Mix shortening with flour mixture, using hands. Add egg and 1 cup water to flour mixture to form stiff dough. Knead well.

Divide dough in four parts. Roll 1/8-inch thick. Cut into pieces, 3-inches square.

Fry in hot deep fat (360 degrees F.). Drain on absorbent paper.

Makes 3 dozen sopaipillas
