Recipe: Port Wine Cheese Log
Appetizers and SnacksHi mammy!I know you asked for our fave cheeseballs however,i've never tried this one,I hope it will do? :)
PORT WINE CHEESE LOG
Adapted from source: Appetizers Appetizers Appetizers: Delicious, Easy-to-prepare Starters for Any Meal by Judi Olstein
1 lb. sharp cheddar cheese
1/2 cup yogurt
1 Tbsp. fresh sage, finely chopped
2 Tbsp. Madeira (or Port)
1 tsp. freshly ground black pepper
1/2 cup coarsely chopped walnuts
Grate the cheddar into a large mixing bowl. Add the yogurt, sage, Madeira (or Port)& pepper; mix well (best done with a clean pair of hands.) If the mixture is too stiff,add a bit more wine till a firm but pliable consistency is reached.
Roll the resultant mixture into a log shape, pressing into a mold or form into a loaf. Press the chopped walnuts over the surface and refrigerate for at least 4 hours.
Let stand at room temperature for an hour before serving with crackers or rounds of crisp toast.
Serves 6 as a single appetizer, 12 or more as part of a buffet.
