Recipe: Cheddar and Chutney Cheese Ball for mammy_Ohio

Here is an unusual cheese ball; it comes from the 1993 Better Homes and Gardens Holiday Appetizers (yup, when it comes to cook books I'm a saver)

CHEDDAR AND CHUTNEY CHEESE BALL

1/4 cup coconut
1 1/2 cups shredded cheddar cheese (6 oz.)
1 (3 oz.) package cream cheese
1/4 cup butter or margarine
1/4 cup snipped chutney
2 Tbsp. finely chopped onion
1/4 cup finely chopped peanuts
Apples, cut into thin wedges
Assorted crackers

Sprinkle the coconut in a thin layer in a shallow baking pan. Bake in a 350 deg. oven about 5 minutes or till light golden brown, stirring once or twice. Set aside to cool.

Combine the cheddar cheese, cream cheese, and butter or margarine in a medium mixing bowl. Bring to room temperature. Beat with an electric mixer on medium speed till combined. Using a spoon, stir in chutney and onion. Cover and chill about 30 minutes or till mixture is slightly firm. Shape into a ball.

Stir together the toasted coconut and peanuts in a small mixing bowl. Roll the cheese ball in the coconut-peanut mixture. Cover and chill for 2-24 hours. Serve with apples and crackers.

Makes 1 cheese ball.
