Recipe: Fried Catfish (using cornmeal)

FRIED CATFISH

2 teaspoons Louisiana Red hot sauce or Tabasco
Juice of 2 lemons
3 pounds catfish fillets
Vegetable oil (for deep frying)
2 eggs
1/4 cup milk
2 cups cornmeal
Salt and freshly ground black pepper
tartar sauce and additional hot sauce (for serving)

Combine hot sauce and lemon juice; rub mixture on fish fillets. Let marinate in the refrigerator for 1 hour.

WHEN READY TO COOK:
Heat 2 inches of oil in a heavy deep skillet or a fryer to 375 degrees F.

While the oil is heating, beat eggs and milk together. Season cornmeal with salt and pepper to taste.

Dip fish fillets into eggs and milk; drain slightly. Roll fillets in cornmeal.

Fry a few at a time in the hot oil for 2 to 3 minutes or until golden brown.

Serve hot with tartar sauce and hot sauce.

Makes 6 servings
