Recipe: Potato Dumplings

Here is an excellent Dumpling Recipe.

2-eggs
1-Tbsp. salt
2 c. flour
3 c. mashed potatos
2-Tbsp Cream of Wheat or (Frina)

Mix in order given. Mix well, knead until dough all blended. Shape into little rolls about 20-25. Drop into boiling water and cook until dumplings float in boiling water, then remove with straining spoon, and put in bowl. Put 2 well rounded Tablespoons of butter on dumplings. Carefully shake or stir dumplings, to evenly coat with butter. Place lid on bowl. Hint! When I make my mashed potatos, I use a mixer to whip them, with milk, butter, salt garlic powder, and a little pepper. Randy Howe
