Recipe: Pumpkin Bread and Banana Bread (using instant pudding mix) - 8 recipes

PUMPKIN BREAD

6 eggs
2 cups sugar
1 cup oil
1 (16 oz.) can pumpkin puree (not sweetened pie filling)
3 cups flour
2 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
1 tsp. ground nutmeg
2 pkg. (3 1/2 oz. each) instant vanilla pudding mix
1/2 cup walnuts (optional)

Beat together eggs. Add sugar, oil and pumpkin.

Sift together flour, soda, salt, cinnamon and nutmeg. Add to first mixture. Mix in (dry) pudding mix. Add walnuts (optional).

Bake in greased and floured loaf pan (makes 2 regular size or 3 small) at 350 degrees F for 1 hour.

PUMPKIN BREAD

3 cups sugar
4 eggs
3 cups flour
1 cup Crisco oil
1 tsp. ground cinnamon
1/2 tsp. ground allspice
1 tsp. baking soda
1/2 cup water
1 (3 1/2 oz.) pkg. vanilla instant pudding mix
1 (16 oz.) can pumpkin puree (not sweetened pie filling)

Mix all ingredients thoroughly. Line 6 (1 pound) coffee cans with foil; grease the foil. Fill each can half full with batter.

Bake at 300 degrees F for 1 hour or until done.

PUMPKIN BREAD

1 (18 1/2 oz.) pkg. spice cake mix
1 (3 1/2 oz.) pkg. instant butterscotch pudding mix
3/4 cup water
1/2 cup oil
1 cup pumpkin
4 eggs

Mix all ingredients together for 4 minutes. Pour into 2 greased loaf pans.

Bake at 350 degrees F for 45 minutes or until bread tests done.

BANANA BREAD

1 1/2 cups sugar
3/4 cup oil
4 eggs
2 1/2 cups flour
1/2 tsp. baking powder
2 tsp. baking soda
1 (3 1/2 oz.) pkg. instant vanilla pudding mix
3 1/2 cups mashed bananas
1 cup chopped nuts

Mix together sugar, oil and eggs.

Sift in flour, baking powder, baking soda, salt and (dry) pudding. Blend in bananas and nuts. Place in 3 greased loaf pans.

Bake at 350 degrees F for 1 hour.

BANANA BREAD

4 eggs
1/2 cup oil
4 mashed bananas, ripened
1 (18 1/2 oz.) pkg. white cake mix
1 (3 1/2 oz.) pkg. instant vanilla pudding mix
1/2 cup to 1 cup chopped pecans

Mix eggs, oil and bananas, then add (dry) cake mix and (dry) pudding mix. Stir in pecans. Pour batter into 3 greased small loaf pans.

Bake in oven at 350 degrees F for 45 minutes.

BANANA BREAD CAKE

1 (18 1/2 oz.) box Duncan Hines yellow cake mix
1 (3 1/2 oz.) pkg. instant pudding mix (vanilla or banana)
1/3 cup Wesson oil
4 eggs
2 bananas, mashed
1 cup nuts, chopped fine

Mix all ingredients together, except nuts. Stir in nuts. Pour a greased 13x9-inch baking pan.

Bake ingredients at 350 degrees F for 35 minutes or until cake tests done.

Mix 2 tablespoons margarine and some water over heat; add confectioner's sugar to make glaze for cake. After cake is done, spread glaze over cake while warm.

BANANA NUT BREAD

1 or 2 small very ripe bananas
1 (18 1/2 oz.) pkg. yellow cake mix
1 (3 1/2 oz.) pkg. instant pudding mix
4 eggs
1 cup water
1/2 cup Wesson oil
1/2 cup chopped nuts

Mix all ingredients together well. Place in greased loaf pan.

Bake at 350 degrees F for 60 or 75 minutes.

BANANA NUT BREAD

1 (18 1/2 oz.) pkg. yellow cake mix
1 (3 1/2 oz.) pkg. banana cream or vanilla instant pudding
1/4 cup oil
1 cup water
4 eggs
2 ripe bananas
1 cup nuts, chopped

Slice bananas in a bowl and mash. Combine all ingredients in bowl. Grease and flour a loaf pan.

Bake at 350 degrees F for 60 to 70 minutes.
