Recipe: Arkansas Oatmeal and Brown Sugar Muffins (using whole wheat flour and cooked oatmeal)

ARKANSAS OATMEAL AND BROWN SUGAR MUFFINS

1 cup whole-wheat flour
1 cup raw wheat germ
1 tbsp baking powder
1/2 tsp salt
1/3 tsp brown sugar, firmly packed
3 tbsp butter
1 1/3 cups milk
1 cup oatmeal, cooked and cooled
1 large egg
1/2 cup raisins (optional)

Preheat oven to 425 degrees F. Lightly grease 12 muffin cups.

Mix flour, wheat germ, baking powder, salt, and brown sugar in large bowl. Cut in butter with fingers.

Beat milk, oatmeal, and egg together. Stir oatmeal mixture into flour mixture only until just blended. Quickly fold in raisins, if using. Spoon batter into prepared muffin-pan cups, generously filling each 3/4 full.

Bake 18 to 20 min. until lightly browned and sharp knife inserted in center of muffin comes out clean.

Makes 12 muffins
