Recipe: Pumpkin Cookies (with chocolate chips)

PUMPKIN COOKIES

"This recipe makes big, soft cake-like cookies that taste even better the next day."

1 1/2 cups sugar
1/2 cup butter or margarine
1 egg
2 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon nutmeg
1 teaspoon cinnamon
1/4 teaspoon salt
1 cup pumpkin puree (solid pack, not pie filling)
1 teaspoon vanilla
1 cup semisweet chocolate chips

Preheat oven to 350 degrees F. Grease a cookie sheet.

Beat together sugar, butter or margarine, and egg until fluffy and well mixed.

Add flour, baking powder, baking soda, nutmeg, cinnamon and salt and mix to combine.

Stir in pumpkin and vanilla until well mixed.

Stir in chocolate chips. Drop by tablespoons onto prepared cookie sheet.

Bake at 350 degrees F for 12 minutes.
