PUMPKIN PIE BARS
Original Recipe taken from Kitchen Favorites published by Cookbook Publishers, Inc. for AAL Branch Loveland, Colorado.
1 cup flour
1/4 cup brown sugar
1/2 cup butter or margarine
Mix flour, brown sugar and butter or margarine for crust. (Should resemble course meal.) Pat in 9" x 13" buttered cake pan. Bake at 350 degrees for 10 minutes.
4 eggs, beaten
2 cans pumpkin
1/2 cup milk
1 1/2 cup sugar
1 tsp salt
1 tsp nutmeg
1 tsp cinnamon
1/2 tsp vanilla
Mix ingredients and pour over crust. Bake at 350 degrees for 40 to 50 minutes or till done.
I wasn't completely happy with the recipe so I've been tweaking it
PUMPKIN PIE BARS REVISED
This is the recipe under development.
1 1/4 cup flour
1/3 cup brown sugar
2/3 cup butter
Mix flour, brown sugar and butter for crust. (Should resemble course meal.) Pat in 9" x 13" buttered cake pan. Bake at 350 degrees for 15 minutes.
4 eggs, beaten
1 large can pumpkin
1/2 cup milk (I use 1 small can of evaporated milk)
1 1/2 cup sugar
1 tsp salt
1/4 tsp nutmeg
1 tsp cinnamon
Mix ingredients and pour over crust. Bake at 350 degrees for 40 to 50 minutes or till done. Sometimes longer. Knife test-knife inserted in center comes out clean.
Note, I don't pour all the filling in. I pour most of it in and then put the remaining filling (2 cups or so) into a buttered dish and bake.
