Recipe: Pumpkin Pudding (crock pot)

PUMPKIN PUDDING

1 (16 oz.) can pumpkin puree (not sweetened pie filling)
1 (13 oz) can evaporated milk
3/4 cup sugar
1/2 cup Bisquick baking mix
2 eggs, beaten
2 tbsp margarine, melted
2 1/2 tsp pumpkin pie spice
2 tsp vanilla
Cool Whip (for serving)

Spray crock pot with non-stick spray.

Beat all ingredients together, except Cool Whip, until smooth with a hand mixer. Pour into prepared crock pot.

Cover crock pot and cook on LOW 3 hours (test with silver knife)

Spoon into cups and top with Cool Whip.

Makes 8 servings
