QUICK FRUIT VINEGAR
Here's a quick way to make flavored fruit vinegars when your recipe calls for only a small portion.
Reduce liqueur to 1/3 of its original volume over low heat: Cassis (for black currant red wine vinegar), Cointreau (for orange white wine vinegar), Framboise (for raspberry red wine vinegar), Peach Brandy, Poire William, etc.
Combine 1 part reduced liqueur to 1 part white wine or red wine vinegar. Add more reduced liqueur or vinegar to taste. The reduced liqueur intensifies the flavor of the vinegar.
