Recipe: Baked Spinach Flavored with Basil and Ricotta

BAKED SPINACH FLAVORED WITH BASIL AND RICOTTA
(Diabetic Friendly)

2 cups cooked spinach
1 Tbsp. fresh basil, chopped
2 Tbsp. ricotta cheese
2 egg yolks
2 cups heavy (whipping) cream
1 Tbsp. grated Parmesan cheese
Salt, pepper, and grated nutmeg (no amounts specified, so I assume to taste)

Preheat oven to 450 degrees F.

Cook the spinach by placing in boiling water for 1 minute. Cool the spinach in ice water.

Squeeze out any excess water from the cooked spinach and place into a food processor with the basil, ricotta cheese, egg yolks, a pinch of salt, a little ground pepper, and grated nutmeg. Puree the whole mixture. Place the mixture into an oven-proof dish. Set aside.

Simmer cream uncovered to reduce cream by half and pour over the puree mixture. Sprinkle with Parmesan cheese.

Bake until golden brown.
