Recipe: Walt's Tuna Melt (serves 2)

Sandwiches
WALT'S TUNA MELT

FOR THE TUNA MIXTURE:
1 (9 ounce) can albacore tuna, drained and flaked
6 tablespoons mayonnaise
3 tablespoons finely chopped sweet onion
3 tablespoons finely chopped black olives
2 teaspoons lemon juice
salt and pepper (to taste)
FOR THE SANDWICHES:
4 teaspoons softened butter
4 slices sourdough bread
2 teaspoons grated Parmesan cheese
2 slices cheddar cheese

In a bowl, combine the ingredients for the tuna tuna mixture.

Butter one side of each piece of bread, and place two slices, butter side down, in a cold pan or on a griddle. Sprinkle with Parmesan cheese. Top with tuna mixture and slice of cheddar. Top with remaining bread, butter side up.

Grill over medium heat until the cheese is melted and the bread is golden.

Makes 2 sandwiches
