MACAROON PIE
"This pie is the pie for the coconut lovers!"
3 eggs
1 cup Karo Light Corn Syrup
1/2 cup sugar
2 tablespoons butter OR margarine
1/4 teaspoon Durkee Pure Almond Extract
1/8 teaspoon salt
1 cup flaked coconut
1 cup sliced almonds
1 (9-inch) unbaked pie crust
Preheat oven to 350 degrees F.
Beat eggs lightly with a fork in a large bowl. Stir in corn syrup, sugar, butter, almond extract and salt until well blended. Add coconut and almonds. Pour into pie crust.
Bake for 50 to 55 minutes or until knife inserted halfway between center and edge comes out clean. Cool pie on wire rack.
SERVING SUGGESTION:
Delicious and tempting as it is, this pie is even better when piped with whipped cream flavored with vanilla extract.
