Recipe(tried): Raspberry Popsicles

Misc.
RASPBERRY POPS
(with variation for Chocolate-Raspberry)
yield: 16 3 oz. pops
.
1 16-oz. pkg. frozen unsweetened raspberries, thawed
1 c. orange juice (or milk plus sweetener)
24 pkg. Equal (or 1 c. sugar)
1/2 c. dry milk powder
1/2 c. ice water (MUST be ice cold)
2 T. lemon juice (or 2 T. cocoa)
.
1) puree and strain berries
2) combine berried, oj (or milk), & Equal in bowl
3) beat milk, water, lemon (or cocoa) on high speed
until still peaks (4-6 min. .. I use hand-blender)
4) fold into fruit mixture. Pour into molds and freeze.
.
(can substitute 2 c. of other fruit puree)
.
35 calories per 3 oz. pop
.
I make 1/2 recipe which makes about 8 small pops.
.
If you don't have milk powder, use 1/2+ c. ICE COLD milk.
I didn't get "stiff peakes" the second time I made them
and they were still delicious.
.
Enjoy,
Janet
