Recipe: Ratios for mixing lowfat milks with half-and-half to approximate whole milk
Tips and Tricks - Cooking I always have 1% milk on hand and usually have half-and-half also, so this really works well for me when a recipe calls specifically for whole milk. The info is from Cook's Illustrated and I thought someone else might appreciate it.
To get 1 cup of whole milk, combine:
5/8 cup skim or nonfat milk with 3/8 cup half-and-half
2/3 cup 1% milk with 1/3 cup half-and-half
3/4 cup 2% milk with 1/4 cup half-and-half
