Recipe(tried): Re:olive curing

We just did this last night!
-Rinse olives
-make a slit in each olive with a knife
-pack olives into sterilized quart or pint jars half way
-add a couple of garlic cloves(split for flavor),1TBSP salt for quarts,a couple of bay leaves and some hot pepper flakes(we use 1/2-tsp for quarts)
-finish packing with olives (not too tightly)
-fill with cooled,boiled water
-cover loosely for a couple of days, then tighten...they will fizz for a couple of days...if the covers are too tight, you could end up with popped covers and worse yet...broken jars
-store in cool, dry place for about 3 months

To eat: drain olives, toss with olive oil and oregano, pour a glass of wine...and enjoy!!
