Recipe(tried): re: Persimmon Jam recipe question

I followed this recipe to a T and it came out perfect. My only thought would be that your persimmons were not fully ripe. Mine were just beginning to get a little wrinkly and they were very soft. Perhaps the type of Persimmon? I started trees 4 years ago and finally have my own to use. I have both Yates and Meader persimmons, so far, the Yates are my favorite.
