Side Dishes - Vegetables

I didn't post this recipe, however I have been making it for ages. In addition to making them for an Appetizer I have many times made them larger, flattened them out as a pancake and use them as a vegetable. They are delicious. they freeze beautifully and reheaat quickly in the micro.
