Misc.Hi Wendy - The Texas size muffin tins are great. Here is a chocolate-chocolate chip muffin that I came up with years ago.
Mom's Chocolate Muffins
2 c. flour
1/2 cup sugar
1 tbsp. bkg. pdr.
1/2 tsp. salt
2 eggs
3/4 cup milk
1 tsp. almond flavor
1/3 cup butter, melted
2 oz. bkg. chocolate, melted
3/4 cup mini-choc. chips
Combine dry ingredients. Combine eggs, milk, almond, and melted butter. Add this to the dry ingred. along with the melted chocolate. Blend just til combined. Add choc. chips. Use to fill greased Texas size muffin cups and bake at 425 deg. for 25 minutes. Cool in pan about 12 minutes, then remove to a rack to cool completely.
