Recipe: Re: Request: breads/no yeast or wheat

Every day bread
(free of yeast, wheat, and gluten)

1/2 c oil
2/3 c sugar
3 eggs
1 c shredded raw carrots
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 1/2 c corn starch
1/4 c potato flour
1/3 c milk or juice
1/2 tsp lemon extract, optional

using mixer, blend oil, sugar and eggs. measure and stir together dry ingredients. add dry ingredients and milk/juice alternately to oil-sugar-egg mixture. add lemon extract. fold in carrots. work quickly as batter rises quickly.
pour batter into greased 5 1/2 inch x 9 1/2 inch x 4 inch loaf pan. bake 350 for 55 to 60 min. cool 15 min and remove from pan. place on rack to cool completely. great for sandwiches.

variation: substitute 3/4 c finelyc rushed, drained unsweetened pineapple for carrots and reduce sugar to 1/2 c.

RYE POTATO-STARCH BREAD

3 1/4 c rye flour
3/4 c potato starch
4 tbsp baking powder
4 tsp sugar
1 tsp salt
1/4 c melted shortening
2 1/4 c water at room temperature

measure dry ingredients without sifting. mix together very thoroughly. mix melted shortening and water together, add to dry ingredients. mix well. pour into w greased 9x5 loaf pans and bake 325 for 1 1/4 hours


RYE-RICE BREAD

1 1/2 c light rye flour
1/2 c rice flour
3 tbsp baking powder
2 tsp sugar
1/2 tsp salt
1 1/4 c water
2 tbsp melted shortening or oil

mix dry ingredients together well. add the ater and beat for 2 min. add shortening and beat for 1 min. bake in a well greased loaf pan 350 for 10 min. reduce heat to 300 and bake 1 hour. slices well when cold. wrap in plastic wrap and refrigerate - will slice better the second day and not crumble as much.

I have not tried these but hope they will help. I would recommend going to your library and checking out 'allergy cookbooks'. There are several available, and you may be able to find some more recipes that are helpful.
