Misc.FRIED ICE CREAM
1 pint ice cream
1 beaten egg
1/4 tsp vanilla
2 cups sweetened corn flakes, crushed
1 tsp cinnamon
1/4 tsp vanilla
cooking oil for deep fat frying
Place 4 scoops (bout a cup each) of ice cream in separate plastic bags. Freeze for about an hour until very firm. In a small mixing bowl, stir together gg & 1/4 tsp vanilla. In a shallow bowl, carefully stir together cereal & cinnamon. Dip each frozen ice cream ball in egg mixture, then roll in cereal mixture. Return coated ice cream balls to freezer for at least 1 hr. You can do all this ahead of time. Reserve remaining cereal mixture. In a small mixig bwl stir together the remaining 1 egg & 1/4 tsp. vanilla. Remove coated icecream bals from freezer. Dip balls in eg mixture again, then roll in remaining cereal mixture Cover & freeze for several hours.
In deep fat fryer or heavy saucepan, fry frozen coated ice cream balls, 1 or 2 at a time in deep, hot oil (375 degrees) for 15 seconds or ntil golden brown. Drain on paper towels. May be served with cocolate sauce, honey, plain or with fried white tortillas dipped in cinnamon sugar.
