Hi Everybody...sounds like we've all been on the same quest for the Buca salad and dressing! I'm pretty sure we won't have much success finding the exact recipes...no doubt Buca guards them carefully!!! *grin* However, my husband's family (we're Italian) has owned two Italian restaurants, my husband and his Dad cooked the dishes...so they have a pretty good eye/palate when it comes to deciphering food combos.
Can't give amounts, but the closest we could come to the Buca dressing is: good quality Dijon mustard, white balsamic vinegar, extra virgin olive oil, a smidge of lemon juice, salt and pepper. Pretty simple huh? Get in your kitchens and start experimenting until you can come up with the correct amounts (go by taste like we did) and see if you think these ingredients taste close to the Buca original.
For those of you who need the salad ingredients...best we can tell: Romaine lettuce, Granny Smith apple, Fuji apple, Craisins, Gorgonzola cheese, Mozzerella cheese, candied walnuts (sugar and cinnamon heated in skillet with walnuts until sugar melts and coats walnuts...immediately turn out onto cookie sheet to cool...make sure to spread them out while still warm or you'll end up w/a ball of walnuts!).
Remember...we don't have the actual recipes...this is only the best we could figure out from eating it. If we've left out something, please feel free to correct/dispute this for us! Thanks!
