Recipe(tried): REC: Tofu "egg" salad

I have posted two recipes. The first I have tried and everyone loved.
The second I hope to try; it sounds good.

Tofu "Egg" Salad

8 oz. firm tofu, drained and mashed
1 red bell pepper, finely chopped
1 small carrot, finely shredded
2 scallions, finely chopped
2 Tbsp. tofu mayonaise or regular if you wish
1 Tbsp. chopped fresh parsley
1 Tbsp. finely chopped dill pickle
1 Tbsp. yellow mustard(I used Dijon)
1/4 tsp. salt
1/8 tsp. pepper

Combine and mix. Adjust seasonings. Makes 4 sandwiches

Mock Egg Salad
8 oz. tofu, crumble or 1 pkg. silken tofu
1 Tbsp. prepared mustard
1 Tbsp. honey
2 tsp. vinegar
1/2 tsp. tumeric
1/2 tsp. onion powder
1/2 tsp. celery seed
1/8 tsp. pepper
1/4 cup minced celery
1/4 cup minced green pepper
2 Tbsp. minced dill pickles

Crumble tofu, add mustard, honey, vinegar and seasonings. Mash well.
Add celery, green pepper, pickles and mix again. You may serve immediately but chilling allows the flavours to blend. Serves 4
