SAVORY HOT POTATO SALAD
3 lb medium potatoes
1 1/2 teaspoons salt
1/8 teaspoon pepper
2/3 cup chopped onion
1/2 cup sliced radishes
1/2 teaspoon celery seed
2 tablespoons chopped parsley
9 bacon slices, finely cut up
1 tablespoon flour
1/2 cup white vinegar
2 tablespoons sugar
Cook unpeeled potatoes, covered, in boiling water just
until tender--about 30 minutes. Drain potatoes; cool;
peel, cut into cubes. Toss lightly with salt, pepper,
onion, radishes, celery seed, and parsley. Saute
bacon in skillet, over low heat, until crisp; remove from
heat. With slotted spoon, remove bacon; add to
potatoes. Drain from skillet all except 1 tablespoon
bacon fat. Stir in flour until smooth. Gradually add
vinegar and 1/2 cup water. Stir in sugar; bring to boiling
point, stirring. In serving bowl, toss lightly with potato
mixture until combined. Serve warm.

Hot German Potato Salad
6 potatoes

dash of pepper
1 cup water
1/2 cup cider vinigar
2 hard cooked eggs
Cook potatoes in boiling salted water for 25-30
minutes, or until tender. Peel and slice potatoes. In
large skillet, cook bacon till crisp; drain and crumble,
reserving 1/4 cup drippings. Cook onion in reserved
drippings till tender but not brown. Stir in flour, sugar,
salt, celery seed, and pepper. Add water and viegar.
Cook and stir till thickened and bubbly. Cook and stir 1
to 2 minutes more. Stir in bacon and potatoes. Cook 5
minutes or till heated through. Add hard-cooked eggs
and toss lightly.
Makes 6 to 8 servings.

This recipe of German Potato Salad is one of my
favorites. I hope this is what you are looking for.
QUICK GERMAN POTATO SALAD

1/4 cup cider vinegar

Pour potatoes into boiling water in large saucepan. Boil
until just tender. Drain potatoes. Put in large bowl with
celery. Fry bacon until crisp in a large skillet; remove
and drain on paper towels. Pour fat into cup and return
1/4 cup of drippings to skillet. Saut onion in drippings
until soft. Stir in vinegar, brown sugar, 2 tb water, salt
and pepper and bring to a boil; pour over potatoes
mixture in the bowl and toss to coat. Serve warm.
