HOMESTYLE PASTA BAKE
1 lb. ziti or elbow macaroni, uncooked
1 egg
1 lb. cottage cheese
1/2 tsp. Italian seasoning
1/2 lb. Italian sausage*
1 envelope (1 3/4 oz.) spaghetti sauce mix
2 cans (6 oz. each) tomato paste
2 1/2 cups water
1 1/2 cups shredded mozzarella cheese
Cook and drain macaroni; set aside.
Lightly beat egg in large mixing bowl; stir in cottage cheese, Italian seasoning, and the cooked macaroni. Spoon into greased 13x9-inch baking dish. Cover loosely with foil.
Bake at 350 degrees F for 30 minutes.
Meanwhile, cut sausage in 1-inch pieces and brown in large saucepan, stirring frequently. Add sauce mix, tomato paste and water. Cover and simmer 15 to 20 minutes, stirring occasionally.
Spoon about half the sauce on top of macaroni; sprinkle with mozzarella cheese.
Bake, uncovered, 10 to 15 minutes.
Cut in squares and serve with remaining sausage and sauce.
*If preferred, omit sausage. Brown 1 pound ground beef and add spaghetti sauce.
Makes 8 to 10 servings
