2 cups all purpose flour
2 cups firmly packed brown sugar
1/2 cup margarine or butter, softened
1 cup chopped nuts
1-2 tsps cinnamon
1 tsp baking soda
1/2 tsp salt
1 cup sour cream
1 tsp vanilla
1 egg
2 cups finely chopped peeled apples
1. Heat oven to 350 degrees F. In large bowl combine flour brown sugar and margarine, beat at low speed until crumbly. Stir in nuts. Press 2 3/4 cups crumb mixture in bottom of ungreased 13 x 9 inch pan.
2. To remaining mixture, add cinnamon, baking soda salt sour cream vanilla and egg mix well. Stir in apples Spoon evenly over crumb mixture in pan.

For the crumble
170g/6oz plain flour
110g/4oz butter
55g/2oz granulated sugar
900g/2lb cooking apples
Peeled, chopped and cooked with texture
Light the oven gas 4/180 C/350 F Make the crumble by rubbing the butter into the flour, and then stir in the sugar. Set aside.
To make the cake
Cream the butter and sugar together until light and fluffy. Slowly add the eggs; beat well between each addition. Stir in the self-raising flour. Put the cake mix into a greased loose bottomed cake tin, pile on the dryish cooked apples then sprinkle the crumble mix over evenly. Hot Caramel Sauce:
1/2 cup (1 stick) unsalted butter
1 cup packed light brown sugar
1/2 teaspoon salt
1 1/2 teaspoons pure vanilla extract
1/2 cup evaporated milk
1. Preheat the oven to 350 degrees F. Grease a 9-inch round cake pan. In a blender or food processor, grind the pecans until fine.
2. In a large bowl, cream the butter and sugar together until fluffy. Add the eggs and beat until well blended. In a medium bowl, stir the flour, baking soda, salt, cinnamon, and nutmeg together. Stir the dry mixture into the wet mixture just until blended. Fold the apples and nuts in until blended.
3. Pour the batter into the prepared pan and smooth the top. Bake for 50 minutes, or until a toothpick inserted in the center comes out clean. Let cool on a wire rack for 15 minutes, then remove from the pan. The center may sink a bit.
4. To Make the Sauce: In a small saucepan, melt the butter with the brown sugar and salt over medium heat. Bring to a boil, whisking constantly. Remove from heat and whisk in the vanilla and milk. Set aside and keep warm. To make ahead, let cool and store in an airtight container in the refrigerator for up to 3 days. Reheat over barely simmering water.

4 red delicious apples, chopped
1/2 cup flaked coconut

3/4 cup mayonnaise

1 (21 oz) can apple fruit filling
6 (8-inch) flour tortillas
1 tsp ground cinnamon
1/3 cup butter or margarine
1/2 cup sugar
1/2 cup firmly packed light brown sugar
1/2 cup water
-Spoon fruit filling evenly down center of each tortilla; sprinkle evenly with cinnamon. Roll up, and place,
seam side down, in a lightly greased 2-quart baking dish. Bring butter and next 3 ingredients to a boil in a medium saucepan; reduce heat, and simmer, stirring constantly, 3 minutes. Pour over enchiladas; let stand 30 minutes. Bake at 350 for 20 minutes.
Yield: 4 to 6 servings

1/2 cup raisins
1/2 cup bourbon
3 pounds cooking apples
3/4 cup sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
1/2 cup chopped pecans or walnuts -- toasted
1 pkg (15oz) refrigerated piecrusts
2 teaspoons apricot preserves, melted
1 tablespoon buttermilk
1 tablespoon sugar
Combine raisins and bourbon, and let soak for at least 2 hours. Peel apples, and cut into 1/2-inch slices; arrange apple slices in a steamer basket over boiling water. Cover and steam 10 minutes or until apple slices are tender.
Combine 3/4 cup sugar and next 4 ingredients in a large bowl; add apple slices, raisin mixture, and pecans, stirring to combine.
Fit 1 piecrust into a 9-inch pie plate according to package directions; brush preserves over piecrust. Spoon apple mixture into piecrust.
Roll remaining piecrust to press out fold lines; cut with a 3-inch leaf-shaped cutter. Mark veins on leaves with a pastry cutter or sharp knife. Arrange pastry leaves over apple mixture; brush leaves with buttermilk, and sprinkle pie with sugar.
Bake at 450 degrees F. on lower rack of oven 15 minutes. Shield edges of pie with strips of aluminum foil to prevent excessive browning. Bake at 350 degrees F. for 30 to 35 additional minutes.

1 cup QUAKER Oats (quick or old fashioned, uncooked)
1/2 cup firmly packed brown sugar
1/3 cup (5 tablespoons plus 1 teaspoon) margarine or butter, melted

FILLING:
4 cups thinly sliced peeled apples (about 4 medium)
2 cups fresh or frozen blueberries or sliced strawberries
1/4 cup firmly packed brown sugar
1/4 cup frozen orange juice concentrate, thawed
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
Heat oven to 350 F. Combine topping ingredients; set aside. Combine filling ingredients in large bowl; stir until apples are evenly coated. Spoon into 8-inch square glass baking dish. Sprinkle topping evenly over fruit. Bake 30 to 35 minutes or until apples are tender.

Any firm cooking apple can be substituted for the Macintosh apple in this recipe.
1 cup all-purpose flour
1/3 cup regular oats
1/3 cup granulated sugar
1/3 cup packed dark brown sugar
1/8 teaspoon salt
1/8 teaspoon ground nutmeg
1/4 cup chilled stick margarine or butter, cut into small pieces
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/3 cup apple juice
1 teaspoon vanilla extract
1 large egg
1-1/2 cups coarsely chopped peeled Macintosh apple (about 2 apples)
Cooking spray
1. Preheat oven to 350 .
2. Lightly spoon flour into a dry measuring cup, and level with a knife. Combine the flour and next 5 ingredients (flour through nutmeg) in a bowl, and cut in the margarine with a pastry blender or 2 knives until the mixture resembles coarse meal. Reserve 1/2 cup flour mixture for topping; set aside.
3. Combine the remaining flour mixture, baking powder, and baking soda, and add the apple juice, vanilla extract, and egg. Beat the mixture at medium speed of a mixer until blended, and fold in the chopped apple.
4. Spoon the batter into an 8-inch round cake pan coated with cooking spray, and sprinkle the reserved 1/2 cup flour mixture over the batter. Bake at 350 for 30 minutes or until cake springs back when touched lightly in center. Cool the cake on a wire rack. 5 tablespoons stick margarine, chilled
1-1/4 cups finely chopped apple
1/2 cup fat-free milk
1/4 cup honey
TOPPING
1 tablespoon Kretschmer Wheat Germ, any flavor
1 tablespoon sugar
1/4 teaspoon ground cinnamon
1. Heat oven to 375 F. Lightly spray cookie sheet with cooking spray.
2. For scones, combine flour, 2/3 cup wheat germ, baking powder, 1 teaspoon cinnamon, nutmeg, baking soda and salt in large bowl; mix well. Cut in margarine with pastry blender or two knives until mixture resembles coarse crumbs. In small bowl, combine apple, milk and honey; blend well. Add to dry ingredients all at once; stir with fork just until dry ingredients are moistened.
3. Turn dough onto lightly floured surface; knead gently 5 to 6 times. Pat dough into 9-inch circle on cookie sheet.
4. For topping, combine remaining 1 tablespoon wheat germ, sugar and remaining 1/4 teaspoon cinnamon in small bowl; mix well. Sprinkle over dough. Cut into 10 wedges; separate wedges slightly.
5. Bake 16 to 18 minutes or until golden brown. Remove to wire rack and cool slightly. Serve warm.

3 firm apples, peeled and roughly chopped
2 oz unsalted butter
1/2 c crumbled graham crackers
2 (8-oz) pkgs cream cheese
2 eggs, beaten
3 teaspoons flour
2 teaspoons ground cinnamon
1 c heavy cream
Preheat the oven to 350 F. Place the apple with 3 tablespoons of water into a saucepan over medium heat. Cook the apple for approximately 10 minutes until it becomes soft and pulpy , stirring occasionally. Place the cooked apple into a blender or food processor and blend for 30 seconds. Pour the puree onto a plate to cool for 10 minutes. While the apple is cooling, place the biscuits into the blender or food processor and blend for 30 seconds. Melt the butter in a saucepan over medium heat.
Add graham cracker crumbs to the melted butter and mix well. Pour the crumb mixture into a 8-inch spring form tin and press the crumb mixture down. Refrigerate the crust until the cheese mixture is ready for use. Place the cream cheese and sugar in a mixing bowl and beat well for approximately 2 minutes.
Add the beaten eggs , flour , apple puree and spice and mix until incorporated . Pour in the cream and mix for about a minute more, and pour the cheesecake mixture into crust. Place the tin onto a baking sheet and into the preheated oven. Bake cheesecake for 1 hour and then turn the oven off leaving the cheesecake in the oven for another 30 minute. Cool the cheesecake in the tin.
Serve at room temperature with a dollop of whipped cream.
