FRENCH APPLE BREAD PUDDING - TG
3 eggs
1 (14-ounce) can Eagle Brand Sweetened Condensed Milk (NOT evaporated milk)
3 medium all-purpose apples, pared, cored and finely chopped
1 3/4 cups hot water
1/4 cup margarine or butter, melted
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
4 cups French bread cubes (about 6 ounces)
1/2 cup raisins, optional
Preheat oven to 350degrees. In large bowl, beat eggs; add sweetened condensed milk, apples, water, margarine, cinnamon and vanilla. Stir in bread and raisins, moistening completely. Turn into buttered 9-inch square baking pan. Bake 1 hour or until knife inserted near center comes out clean. Cool. Serve warm with Brandy Butter Sauce or ice cream if desired. Refrigerate leftovers.
Brandy Butter Sauce
In saucepan, melt 1/4 cup butter or margarine; add 1/4 cup firmly packed brown sugar and 1/2 cup whipping cream. Boil rapidly 8 to 10 minutes; add 2 tablespoons brandy or 1 teaspoon rum flavoring. Serve warm. (Makes about 1 cup)
Banana Bread Pudding. Substitute whole wheat bread cubes for white bread cubes. Add 1/2 cup flaked coconut. Decrease water to 2 1/2 cups. Beat 3 ripe medium bananas, mashed, with eggs. Proceed as above. Top with 1/2 cup chopped pecans. Bake as above. Serve with Butter Rum Sauce.

Apple Cheddar Cookies
1/2 c Butter
1/2 c Sugar
1 Egg; large
1 tsp Vanilla
1 1/2 c Unbleached flour
1/2 tsp Baking soda
1/2 tsp Cinnamon; ground
1/2 tsp Salt
6 oz Cheddar; sharp, shredded
1 1/2 c Apples; cored, peeled, chopped
1/4 c Nuts; chopped
Cream the butter and sugar until light and fluffy, then stir in the egg and
vanilla. Add the combined dry ingredients, blending well. Stir in the
cheese, apples and nuts. Drop rounded teaspoonfuls of the dough onto an
ungreased cookie sheet and bake at 375 degrees F. for 15 minutes. Remove
from the cookie sheet and cool on a wire rack or plate.

Pear mini muffins
2 cups all purpose flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp allspice
1/2 tsp salt
1 cup buttermilk
1/4 cup vegetable oil
1 egg
2/3 cup packed brown sugar
1 16oz can pear slices drained and finely chopped
Pre-heat oven to 350degrees. Line the cups of the mini muffin tin with paper liners. In a medium size bowl sift flour, baking soda, cinnamon, allspice and salt.
In a large bowl, blend the buttermilk, oil, egg and brown sugar. Add the flour mixture to the wet ingredients, stirring until combined. Fold in pears.
Fill the cups 2/3 of the way up. Bake for 18-20 mins or until golden brown

Garden Harvest Muffins

4 c. all-purpose flour
2 1/2 c. sugar
4 tsp. baking soda
4 tsp. cinnamon
1 tsp. salt
2 c. grated carrots
2 c. grated zucchini
1 c. raisins
1 c. chopped pecans
1 c. coconut
2 tart apples -- peeled and grated
6 large eggs
1 c. vegetable oil
1 c. buttermilk
2 tsp. vanilla
Preheat the oven to 375F. In a large bowl, sift together the flour,
sugar, baking soda, cinnamon, and salt. Stir in the carrots, zucchini,
raisins, pecans, coconut, and apples. In another bowl, whisk together the
remaining ingredients and add to the flour- vegetable mixture. Stir the
batter until just blended. Spoon the batter into well-buttered muffin
tins (or use paper liners). Bake on the middle rack for 25 to 30 minutes,
or until the muffins are springy to the touch. Let the muffins cool in
the tins for 5 minutes, then turn them out onto a rack.
Makes about 30 muffins

Gettie's Apple Pecan Pie

1 unbaked 9-inch pie shell
4 cups cooking apples -- chopped
1 cup sugar
2 tablespoons flour
4 tablespoons butter -- cut into small pieces
1 cup pecans -- chopped
1 teaspoon cinnamon
Mix sugar and flour together. Mix lightly with apples, then mix in butter,
chopped pecans and cinnamon. Fill pie shell and bake at 400 deg. for 30
min. Serve hot. Top with ice cream or whipped cream.

Rock Cornish Hens in the Crockpot

1 large red apple, quartered and cored
1 tablespoon soy sauce
4 rock Cornish game hens
1 cup dry white or rose wine
3 tablespoons orange marmalade
1/2 lemon -- juice and rind
1/2 teaspoon salt
1/8 teaspoon pepper
Dip apple quarters into soy sauce, and put one into the cavity of each hen. Stir wine, marmalade, lemon rind and juice, salt and pepper into remaining sauce and brush over hens. Place hens breast side down in a five quart cooker, and pour the remaining sauce over all. Cover and cook on low for 7 hours. If possible, baste after three hours. Arrange hens on a heated serving platter and serve with canned pear halves filled with prepared chicken flavored stuffing mix., if you wish.

Roast Chicken Stuffing

2 cups seasoned bread stuffing mix
1/2 cup butter
1/4 cup seedless raisins
1/4 cup apple -- chopped
1/4 cup celery -- chopped
2 tablespoons walnuts -- chopped
1/4 cup chicken stock
Saute stuffing mix in melted butter for 5 minutes. Add all other ingredients and mix thoroughly, adding more chicken stock if the stuffing seems too dry for your taste. Will stuff a 6 to 7 pound roaster.

Red Cabbage With Apples And Wine

2 Lb. Red Cabbage -- shredded
6 Tbls Butter
1 Lb. Green Apples -- quartered
1/2 Lb. Onions -- sliced
2 Cloves Garlic -- finely chopped
1/4 Tsp. Nutmeg, Allspice, Cinnamon, Thyme And Caraway
1 Tsp. Grated Orange Rind -- (opt.) (1 to 2)
1/4 Cup Brown Sugar, Packed
2 Tbls Wine Vinegar
1 1/4 Cups Dry Red Wine
Cook cabbage in butter in covered pan for 5 minutes. In a casserole dish, layer 1/3 of the cabbage, apples, onions, garlic and spices. Repeat three times until all those ingredients are used. Sprinkle brown sugar over top and add vinegar and wine. Cover and bake at 300 - 350 degrees F until tender. Add more wine if necessary.
Note: once you've made it, you can adjust the seasonings, etc. It is absolutely one of our favorites with pork or duck. My German friends used bacon grease instead of the butter, so that's another option.

1 red cabbage -- shredded
2 pippin apples -- chopped
1/4 c celery -- minced
2 tbsp lemon juice
1/4 c wine vinegar
1/4 c vegetable oil
1 tbsp honey
1/2 tsp mustard
3 tbsp parsley -- chopped
1/2 c walnuts -- chopped
1 dash salt
1 dash pepper
In large mixing bowl place cabbage, apples and celery; sprinkle with lemon juice. In separate bowl mix vinegar, oil, mustard, parsley, salt and pepper. Add to cabbage mixture, add nuts; toss and chill 1 hour.

Razzle-Apple Streusel Bars
2 cups oatmeal
2 1/2 cups all-purpose flour
1 1/4 cups sugar
2 teaspoons baking powder
1 cup butter or margarine -- melted
3 cups apples -- peeled, thinly slice
2 tablespoons all-purpose flour
1 cup raspberry preserves
Heat oven to 375 degrees. For crust and streusel, combine oats, flour, sugar and baking powder; mix well. Add margarine, mixing until moistened. Reserve 2 cups; set aside. Press remaining oat mixture onto bottom of 13 x 9 inch baking pan. Bake 15 minutes. For filling, combine apples and flour. Stir in preserves. Spread onto crust to within 1/2 inch of edge. Sprinkle with reserved oat mixture, pressing lightly. Bake 30 to 35 minutes or until light golden brown. Cool completely; cut into bars.

1/4 cup apple juice or orange or pineapple juice
Place all ingredients in blender or food processor.
Puree to desired smoothness.

2 apples -- peeled and sliced
1 teaspoon ground cinnamon
1/2 cup sugar
1/2 cup packed brown sugar
1 cup milk
4 eggs
1 cup self-rising flour
2 tablespoons butter
* Substitute firm, ripe, unpeeled and sliced pears or fresh peach slices if you prefer.
1. Peel, core and thinly slice 2 large apples.
2. Blend the cinnamon and both sugars. Add the apple slices and stir to coat thoroughly.
3. In a blender place the milk, eggs, flour and a dash of salt if you wish. Blend until smooth.
4. Melt butter (about 2 tablespoons) in oven-proof skillet. Add apple mixture and saute until sugars have melted. Spread the apples in an even layer and pour the batter over this mixture. Add a few raspberries to apple mixture if you wish.
5. Bake in preheated 425-degree oven for 25-30 minutes, or until pancake is puffed and edges are golden brown.
Serve with syrup or your choice of toppings.

1/4 cup sugar
11/2 cup water
2 T. margarine

In a saucepan, combine vanilla, tapioca pudding, sugar. Gradually stir in water, Cook over med. heat, stirring constantly. until mixture comes to a full boil, Remove from heat, Stir in margarine.
Place sliced apples in a greased 1 qt. casserole dish, Pour hot tapioca pudding over apples. Cover and bake at 350 for 30 to 40 minutes or until apples are tender. Serve warm or cold with cream. Makes 6 servings. 165 calories per serving
