Recipe: Recipes: Water Ice
Misc.Hi Everyone,
Someone was looking for water ice recipes(forgive me...I'm not sure who it was
and I even did a search with the new nifty find feature but to no avail)
Anyway, these were in our local paper. They sound like Philly style water ice.
Mango Water Ice
1 cup mango puree( made from about 1 pound fresh mango, cut into chunks
3/4 cup sugar
2 Tbsp. lemon juice
1/2 cup water
Puree the mango in a food processor or blender until very smooth. Add sugar,
lemon juice and water and stir or process until sugar dissolves. Chill in
freezer until mixture is very cold, then freeze in an ice cream maker. Makes
2 cups.
Variations: To make other fruit ices, follow instructions above, but use these
amounts.
Cantaloupe; 1 cup cantaloupe puree, 13 tablespoons sugar, 2 tablespoons lemon
juice and 1/2 cup water.
Banana: 1 cup banana puree, 10 tablespoons sugar, 2 tablespoons lemon juice,
1/2 cup water.
Kiwi: 3/4 cup kiwi puree, 3/4 cup sugar, NO LEMON JUICE, 3/4 cup water.
Source: Adapted from "The Curious Cook" by Harold McGee(North Point Press,l990)
These are the quantities for a sweet water ice, which will be soft and
spoonable straight from the freezer.
