Hi Liz:-) I, too, had trouble with the site. I wanted the recipe that Mario Batali did just this last Fri. DH found both your recipe and mine for us:-) Here is yours:
SECRET CHICKEN SATAY
Source: Mark Samuelson
4 chicken breasts
4 skewers
MARINADE:
8 cloves garlic
1/2 table spoon mild chili powder
2 red onions, cut into quarters
1 tablespoon soy sauce
VINAIGRETTE:
3 tablespoons balsamic vinaigrette
Juice from 2 limes
1 tablespoon sesame seed
1 teaspoon sesame oil
3 tablespoons olive oil
1/4 watermelon (SECRET INGREDIENT)
FINISHING TOUCHES:
1 bunch baby spinach
2 limes, cut into quarters
1 teaspoon cilantro, chopped
In a bowl mix garlic, chili powder, red onion, soy sauce.
Cut the chicken pieces into quarters. Toss chicken into the marinade.
On a skewer alternate chicken, garlic, onion, until even divided.
Put the skewers on the grill and grill for 14 minutes, 7 minutes on each side.
In the meantime, roast the sesame seed in a pan. Add in the lime juice, sesame oil, olive oil, and balsamic vinaigrette and let simmer for 5 minutes. Take off heat and let cool down
Cut the watermelon into 2-inch pieces. Toss in the oil mix and grill for 3 minutes, and set aside.
Toss the baby spinach in the vinaigrette.
Put the watermelon on a plate. Put the chicken skewers and spinach on top. Squeeze the lime juice on top and serve, and sprinkle chopped cilantro.
