RICE WITH EGG
(SOPA DE ARROZ CON HUEVO)
3 cups water
1 1/2 cups rice
1 beef bouillon cube
3 to 4 tablespoons butter
2/3 cup grated Parmesan cheese
2 eggs, beaten slightly
Place water in the pressure cooker and heat to a boil.
Add the rice, bouillon cube, and butter. Close cooker and cook 4 to 6 minutes. Release pressure. Open pot.
Add Parmesan cheese and both eggs; stirring gently; the eggs should cook from the heat in the pot. Finish cooking over a low flame if necessary.
Servings: 6
