Recipe: Roast or Grilled Leg of Lamb - re: Netting on leg of lamb

If you are roasting the leg of lamb, remove from plastic bag and leave the netting on the leg.

Pre-heat oven to 350 F. Place, fat side up, on rack in pan. Reduce temperature to 325 F. Cook 28-30 min. per lb. or until meat thermometer reads 150 F. (for medium rare). Remove from oven, let stand for 5 minutes before cutting.

If you are grilling the leg of lamb, remove from bag and remove the net. In order to create greater uniformity for grilling, the thicker portions of the Leg should be "Butterflied." (Cut through the thicker portion, almost to edge, and fold back so the shape of the Leg resembles a butterfly when laid flat on the grill). Grill as you would a steak. Medium rare is usually the desired doneness.
