Recipe: Beef Chimichangas

BEEF CHIMICHANGAS

1 lb ground beef
1 small onion, chopped
1 clove garlic, minced
1 envelope taco seasoning mix
2 cups refried beans
1 cup shredded cheddar cheese
8 large flour tortillas, 8 inches in diameter or larger

In skillet over medium high heat, brown beef, onion and garlic. Drain any excess fat and add taco seasoning; set aside.

Place tortillas on flat surface. Spread each one with some refried beans, then with meat mixture, and then 2 tablespoons or so of cheese. Fold ends and sides over and secure with toothpick.

Heat oil to 370 degrees F in deep fryer.

Fry chimichangas in batches until golden brown. Drain on paper towels.
