Recipe: Roasted Grapes with Soft-Ripened Blue Cheese

ROASTED GRAPES WITH SOFT-RIPENED BLUE CHEESE

1/4 cup granulated sugar
3 tablespoons water
1 vanilla bean, split
3 cups seedless red grapes, stemmed
4 ounces Gorgonzola Dolce, Blue Castello or other mild, creamy blue cheese

Preheat the oven to 425 degrees F.

In an 8x8-inch baking dish, combine the sugar, water and vanilla bean and stir until the sugar is dissolved. Add the grapes to the dish.

Bake, shaking the pan occasionally, for 15 minutes. Remove and discard the vanilla bean.

TO SERVE:
Divide the grapes evenly among four bowls, drizzling the syrup from the baking dish over the grapes. Slice the cheese into 8 thin strips and place 2 strips in the shape of an X over each serving of grapes.

Makes 4 servings
