Recipe: Double Happiness (beef, chicken, peppers and zucchini with brown rice and peanut sauce)

5 cups cooked brown rice
1 cup teriyaki sauce, divided use
1 pound tender beef, cut in cubes
4 medium boneless, skinless chicken breast halves, cut in medium strips
1/2 cup red bell peppers, julienned
1/2 cup yellow bell peppers, julienned
1 1/2 cups cut on bias zucchini
1 pound bean sprouts
FOR SERVING:
3/4 cup peanut sauce, warmed
Black and white sesame seeds
1/4 cup thinly sliced green and white scallion
1/8 cup coarsely chopped fresh cilantro
Lightly oil non-stick pan or non-stick wok and saute brown rice to crisp. Drizzle 1/4 cup of teriyaki sauce on rice while cooking.
Saute beef and chicken on medium-high heat. Add remaining 3/4 cup teriyaki sauce and slightly blacken.
Grill zucchini in separate pan. Lightly grill bean sprouts, red bell peppers and yellow bell peppers.
PLATE PRESENTATION:
Center rice on platter. Surround with zucchini, chicken and beef. Pile bean sprouts, red bell peppers, and yellow bell peppers on top of rice. Drizzle peanut sauce on meat, zucchini and plate. Garnish with a sprinkle of black and white sesame seeds, scallion rings and cilantro.
