ROCK ROAD CHOCOLATE CAKE MADE IN CROCK POT
1 (2-layer size) pkg. German Chocolate Cake Mix
1 1/4 cups milk
1 cup sour cream
3 eggs, beaten
1/3 cup butter, melted
1 tsp vanilla
1 (4-serving size) pkg. cook-and-serve chocolate pudding mix
2 cups milk, heated (not boiling)
FOR THE TOPPING:
1/2 cup pecans
1 1/2 cups mini marshmallows
1 cup chocolate chips
whipped cream or ice cream (for serving)
Coat a 4 to 5 quart crock pot with non-stick cooking spray.
Mix together dry cake mix, 1 1/4 cups milk, sour cream, eggs, melted butter, and vanilla with a mixer for 2 minutes; stop and scrape bowl; mix 2 minutes more. Pour in to crock pot.
Sprinkle dry pudding mix over cake batter. Slowly pour 2 cups hot milk over pudding.
Cover and cook for 3 1/2 hours on low.
When done turn off cooker. Sprinkle pecans, marshmallow and chocolate chips over cake. Let set 15 minutes until the chocolate chips and marshmallows melt, then enjoy with whipped cream or ice cream.
