Recipe(tried): Roger's Dip
Misc.Here's my husband's favorite, although it doesn't have cream cheese or refried beans. If you start with the cheese/rotel base, you can add just about thing you want--like pinto beans, chili beans, etc.
Roger's Dip
1# ground meat, browned and drained (I've used beef, pork, and turkey with good results)
2# velveeta, cubed
2 cans Ro-tel tomatoes (diced with green chilies) (I don't drain them, but you could if you wanted a thicker dip)
Other optional additions: beans, package of taco seasoning
Mix all together in a crock pot. Stir occasionally as cheese melts. Serve with tortilla chips. You can also serve it with sour cream, guacamole, lettuce, etc. We like to put chips on the bottom, ladle the dip on top, then top with sour cream, black olives, lettuce, tomatoes, and guacamole.
Hope this is close to what you were looking for! If not, it's still a really good dip that everyone loves.
