CINNAMON STICK PICKLES
For the person looking for a pickle recipe for large or overripe cucumbers, I have made these for several years.
2 gallons cukes, peeled and cut in strips
8 1/2 quarts water
2 cups pickling lime
Soak cukes in water adn lime solution for 24 hours and rinse well with cold water.
Brine:
2 cups vinegar
2 cups water *
8 cups sugar
16 oz red hot candies
1 1/2 TBSP alum
1 TBSP red food color
6 sticks cinnamon
Combine all brine ingredients to make a syrup. Add drained cukes and simmer covered for 2 hours. Let stand overnight. Drain off syrup, bring to a boil and pour over cukes.......do this for 3 days
Pack in hot jars and seal, 20 minutes in boiling water bath. Makes 12 quarts
* Use one cup of the water to melt red hots
