I found a posting with a recipe that I tried, and found it remarkably close. I am cutting and pasting the posting that I found, but I HEARTILY apologize, because I didn't get the name of who posted it. Please let me know, because you have my deepest gratitude! I ate at Macaroni Grill Monday, and had this dish - it reinforced how close this recipe is! The only change I made was to add mushrooms, grilled chicken and about a cup or so of parmesan cheese to make the sauce closer resemble Macaroni Grill's. Thanks again!!
*For anyone of you who may be interested, after 3 attempts at the sauce I got pretty close with this one.....
Chicken Rigatoni like Romano Macaroni Grill
3 tbsp butter
1 onion
sugar
1/2 cup marsala wine
1 cup heavy cream
1 tsp thyme
salt and pepper to taste
fresh basil
Cut onion and place in sauce pan with melted butter, saute for a while then sprinkle with a bit of sugar to help the caramalizing process. Add wine and wait till there is only about 2 tbsp of liquid left then add cream and thyme. Let simmer for about 10 minutes then add salt and pepper. Serve over rigatoni pasta.
I also put some fresh basil in the sauce right before serving - long enough for it to wilt for a moment and release some fragrance!
***The dish at macaroni grill is served with grilled chicken but this was as close to the sauce as I've ever gotten*** *
