Recipe: Rotel Tomatoes (canning recipe)

Rotel Tomatoes

1 Gallon Tomatoes
8 hot peppers
2 sweet peppers
2 onions
3/4 Cup vinegar
1 teaspoon salt

Peel and cut tomatoes in chunks. Chop pepper and onion, add all ingredients, including vinegar and salt. Cook over medium heat until it thickens some. Jar and seal. Makes about 7 or 8 pints.

I would recommend pressure canning at 10 lb. weighted gauge, 11 lb. dial gauge , pints for 35 minutes.
It will not be as firm as boughten rotel because they use a firming agent in theirs.
