PASTA AND RED BEAN SALAD
2 cups rotini, or ziti
2 cups red kidney beans, cooked
1 cup diced zucchini
1 small green bell pepper, diced
1 medium tomato, chopped
1/3 cup chopped green olives
1 cup tofu mayonnaise
1/2 teaspoon chili powder
1/2 teaspoon coriander
1/2 teaspoon paprika
1/4 teaspoon sage
salt and pepper (to taste)
Cook pasta till al dente. Rinse and drain. Put in large bowl and add rest of the ingredients. Mix thoroughly and serve at room temperature.
Servings: 6
