Recipe: Rubarb Squares

Hi Beth, Here is the recipe out of the Dispatch. You can do a search and get the Dispatch on line and get the recipes there.
RHUBARB SQUARES

1 cup flour

1/3 cup confectioners' sugar

1/3 cup butter or margarine

Filling

1 cup granulated sugar

1/4 cup flour

2 eggs, lightly beaten

1 teaspoon vanilla

3 cups finely chopped fresh or frozen rhubarb

In a bowl, combine 1 cup flour and the confectioners' sugar. Cut in the butter until mixture resembles coarse crumbs.

Press into the bottom of a greased 11x7x2-inch baking pan. Bake at 350 for 12 minutes.

For the Filling, combine granulated sugar, 1/4 cup flour, the eggs and vanilla. Stir in the rhubarb.

Pour over the warm crust. Bake at 350 for 35-40 minutes or until a wooden pick inserted near the center comes out clean.

Cool on a wire rack. Serve warm, if desired. Store in the refrigerator. Makes 16 servings.
