Recipe: Greek Coney Hot Sauce

GREEK CONEY HOT SAUCE

"Terrific Coney Dog sauce, or over baked potatoes or rice. Also a terrific lasagna sauce."

1 medium onion, chopped
1 clove garlic, minced
1 tablespoon oil
1 pound lean triple-ground beef
1 cup water
1 (6 ounce) can tomato paste
1/2 tablespoon brown sugar (optional)
1 teaspoon ground black pepper
3/4 teaspoon ground cayenne pepper
1 teaspoon chili powder
1 1/2 teaspoons paprika
1/2 teaspoon ground cumin
1/2 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 teaspoon salt (or to taste)

In large skillet, fry chopped onion and garlic in oil until soft.

Add meat, stirring constantly with fork to keep its texture fine.

Once the meat browns, add 1 cup water and tomato paste. Simmer 10 minutes.

Add brown sugar and spices. Simmer 30 minutes, COVERED.

Adjust seasoning. Serve, or refrigerate/freeze.

Makes 8 servings (1/4 cup each)
