Recipe: Rum Raisin French Toast (using ice cream)
Breakfast and BrunchRum Raisin French Toast
3/4 cup melted rum raisin ice cream
3 eggs, beaten
1/2 cup ground walnuts
1 tbsp. amber rum
1/4 tsp. cinnamon
8 slices raisin bread
2 tbsp. butter
Maple syrup, warm
Rum raisin ice cream
Combine melted ice cream with eggs, walnuts, rum, and cinnamon in a shallow dish; mix well. Soak raisin bread slices in mixture 1 minute per side.
Melt 2 tablespoons butter in heavy skillet over medium heat.
Cook the soaked slices 2 minutes each side or until brown.
Serve immediately with scoop of ice cream and warm syrup.

This isn't the exact recipe you're looking for but here are my suggestions to make it close. Use vanilla ice cream, substitute a teaspoon of vanilla or maple flavoring for the rum, substitute 1/2 cup finely chopped or grated peeled fresh apple for the walnuts. But I have to tell you the rum raisin version looks very good! If you experiment with it please share your recipe with us.
