Sounds like he is related to my father-in-law! He has his definite likes and dislikes!

Three Bean Salad

1/4 cup chopped onion
1 can green beans
1 can yellow wax beans
1 can red kidney beans
Drain all beans.

Dressing:
1/2 cup salad oil
1/2 cup sugar
3/4 cup vinegar
1/2 teaspoon salt
1/2 teaspoon pepper

Add dressing to drained beans, mix well, and chill in frig several hours before serving.


Here is another salad. It's a bit odd, but one of my favorite salads from my mother-in-law. My husband won't eat it, so it's all mine!

Red Bean Salad

1 large can kidney beans, drained (I use Hanover)
1 finely chopped stalk of celery
1/3 cup finely chopped onion
1/2 to 2/3 cup salad dressing or mayo
1/2 teaspoon salt
4 hard boiled eggs, chopped
3 tablespoons sweet pickle relish

Mix altogether. Sometimes I add extra celery and onions if making it to take someplace, so it's not so "beany". Then, it looks nice with a couple of extra hard boiled eggs sliced over top.

Broccoli and Cheese Salad

Yes, I know you said no broccoli, but this is absolutely delicious when you use frozen peas instead.

1 bunch broccoli, chopped (or a package of frozen peas)
1 red onion, chopped
1 cup shredded Cheddar cheese
1/2 cup bacon bits
1/2 cup mayo
1/4 cup sour cream
1/4 cup sugar
2 tablespoons vinegar (cider)

Combine broccoli (peas), onion, cheese and bacon bits in salad bowl, mix well. Blend mayonnaise, sour cream, sugar and vinegar in small bowl. Pour over salad. Mix well. I cook the peas just a couple of minutes in the microwave to thaw them. Make sure they are well drained.
