Recipe: Salmon Satays (serves 2-3)

SALMON SATAYS

2 tablespoons plum sauce
2 tablespoons oyster sauce
2 teaspoons lemon juice or lime juice
1 teaspoon finely chopped ginger root
1 clove garlic, minced
1 (6-ounce) salmon fillet, skin removed
1 teaspoon sesame seeds, optional

In a small bowl or measuring cup, combine plum sauce, oyster sauce, lemon juice, ginger root and garlic; set aside.

Cut salmon lengthwise into 6 strips. Thread salmon onto six (6- to 8-inch) bamboo skewers. Spoon marinade over both sides of salmon. Arrange satays on lightly greased broiler rack placed over oven pan, with exposed skewer ends near oven door to prevent burning.

Broil under preheated toaster oven broiler 2 minutes per side, or just until white juices rise to surface. Turn carefully. Sprinkle with sesame seeds, if using, during last 30 seconds of cooking.

Makes 2 to 3 servings
