SAUCY APPLE TURKEY RING
1-1/4 pounds raw lean ground turkey
1-1/4 pounds sweet Italian sausage, casing removed
2 cups apples, cored and chopped
1-1/2 cups crushed seasoned croutons
1/2 cup apple butter
1/2 cup onion, chopped
3 eggs
1 tablespoon mustard
1 tablespoon prepared horseradish
GLAZE:
1/4 CUP apple butter
1/4 cup apple cider
1 teaspoon mustard
In large bowl gently but thoroughly mix together all ingredients EXCEPT glaze. Pack evenly into bundt or ring-type pan (or you can shape into a long loaf - or two loaves - as you desire). Bake in preheated 350 degree oven until done (use your meat thermometer.) Let rest about 8 minutes; then unmold on heatproof platter and drizzle with glaze. Return to oven about 8 minutes.
Garnish with Italian parsley.
About 10 servings.
You could easily cut this recipe in half.
Note: We like the combo of the apple butter, mustard and horseradish and use a variation of this in other dishes: i.e. burgers; meatballs, etc. It works well with ground pork, lamb, chicken or turkey - especially when combined with some sausage. It is good with beef ...but not just 'straight' beef, in our mind.
