Recipe: Zucchini with Walnuts (Southern Living, 1980's)

Side Dishes - Vegetables
ZUCCHINI WITH WALNUTS

1 1/2 pounds zucchini, unpeeled
1/2 cup green onions sliced
1/2 cup oil
1/2 cup water
1/4 cup dry white wine
2 tablespoons lemon juice
1/2 teaspoon salt
1/2 cup walnuts, coarsely chopped

Cut zucchini in 1/2-inch slices. Saute zucchini and green onions in oil for 5 minutes.

Add 1/2 cup water, wine, lemon juice and salt. Simmer for 5 minutes.

Add walnuts and serve hot.

Makes 6 servings
