Recipe: Sausage Sampler Kabobs with Onion Sauce (with peppers and new potatoes, 1980's)

SAUSAGE SAMPLER KABOBS

12 small new potatoes (about 1 3/4 pounds)
1 green bell pepper, cut into 1-inch pieces
5 bratwurst links (16 ounces)
3 mild Italian sausage links (10 ounces)
3 Polish sausage links (8 ounces)
1 recipe Onion Sauce (recipe follows)

Peel a strip from the middle of each potato. Cook potatoes, covered, in enough boiling water to cover, 10 minutes or till tender; add green pepper the last 2 to 3 minutes. Drain vegetables; set aside.

In large saucepan add sausages to enough boiling water to cover; reduce heat. Simmer, covered, 10 to 12 minutes or till done; drain.

Cut sausage crosswise into 2-inch pieces. On 6 skewers, thread green pepper, sausage, and potatoes.

Grill kabobs over hot coals for 10 to 12 minutes. Turn kabobs often, brushing with the Onion Sauce.

Heat and pass remaining Onion Sauce.

ONION SAUCE
Makes 2 cups sauce

4 slices bacon, diced
3/4 cup chopped onion
2 tablespoons all-purpose flour
4 teaspoons sugar
1/8 teaspoon ground black pepper
3/4 cup beer
1/3 cup water
1/4 cup vinegar

In a saucepan cook the bacon until partially done. Add the onion. Cook till onion is tender but not brown.

Stir in the flour, sugar, and pepper. Add beer, 1/3 cup water, and vinegar. Cook and stir till thickened and bubbly. Cook and stir 1 minute more.

Makes 6 servings
