Recipe: School Cafeteria Egg-Cheeseburger (scrambled eggs on buns, 1950's)

Sandwiches
SCHOOL CAFETERIA EGG-CHEESEBURGER

2 tbsp finely chopped green bell pepper
2 tbsp finely chopped onion
2 tbsp cooking fat
8 eggs, slightly beaten
1/2 tsp salt
1/8 tsp ground black pepper
8 slices cheese
FOR SERVING:
8 hamburger buns
Sliced tomatoes
Lettuce

Cook green pepper and onion in fat until onion is transparent, but not browned.

Blend eggs and seasonings and add cooked onions and cooked green pepper. Scramble over low heat.

Top half of a bun with a slice of cheese. Place both halves of bun under broiler and cook until cheese begins to soften and other half of bun is lightly browned.

Place scrambled eggs on toasted half and serve hot with sliced tomatoes and lettuce.

Makes 8 servings
